Ingredients:
Arhar dal - 1/2cup
Onion - 1 medium
Tomato. - 2 medium
Ginger garlic
Paste. - 1,1/2 tsp
Curry leaves. - 8-9 nos.
Fenugreek seeds. - 1 tsp
Dry coconut
Powder. - 3 tsp
Cumin powder. - 1 tsp
Coriander powder - 2 tsp
Dry red chilli - 2-3 nos ( optional )
Turmeric powder. - 1/2 tsp
Red chilli powder. - 1 tsp
Garam masala
Powder. - 1/2 tsp
Sambar masala
Powder. - 2 tsp
Salt as per taste
Jaggery powder. -1,1/2 tsp
Tamarind pulp. - 2 tsp
Mustard seeds. - 1 tsp
Oil - 2 tbsp
Vegetables of your
Choice. - ( Drumsticks, pumpkin, brinjal, raddish , potato etc.)
Method:
1. Wash arhar dal properly and place it in cooker with some water for cooking ,
2. At the same time wash all the vegetables and also place them in cooker allow it to cook till four whistle.
3. Dry roast coconut powder till becomes golden in colour.
4. Then in the mortar and pestle take Fenugreek seeds, coconut powder, Mustard seeds, and make a powder, then add coriander powder, cumin powder, Ginger garlic paste to it, and make a fine paste .
5. Take a kadai put oil into it followed by the above paste we made. Let it cook for around 3-4 minutes then add turmeric powder, red chilli powder to it again let it it cook for 2-3 minutes,
6. Add 3 cups of water to it
( For 1 cup arhar dal take 6 cups of water)
And allow it to boil.
7. Add vegetables and dal and allow it to cook for sometime till it start boiling .
8. Add tamarind pulp and jaggery powder, to the sambar,along with it add sambar masala and salt to taste
9. At last add garam masala .
10. For tadka in the wok add some oil , as the oil heats up add Mustard Seed let it spluttered . Then add asafoetida ,dry red chilli , curry leaves. Let it cook for 1 minute
11. Add the tadka to the sambar. Garnish it with coriander leaves and sambar is ready.
Serve the sambar with piping hot idli , dosa or uttapam.
